Spatchcock refers to a poultry, often chicken, that has been prepared for cooking by removing the backbone so that it can be flattened. This process involves cutting along one side of the backbone then cutting along the other side to completely remove the backbone. Once the backbone is removed, the bird is opened up and flattened by pressing down firmly on the breastbone, cracking it if necessary. This allows for quicker and more even cooking, whether on a grill, in an oven, or under a broiler, resulting in crispier skin and juicier meat.
