1. In a heavy bottom saucepot or enameled cast iron Dutch oven, we're sweating one small finely chopped onion in a little bit of olive oil for three to five minutes over medium heat until softened, adding three or four crushed cloves of garlic and a little sprinkle of red pepper flake and sauteing for another 30 seconds or until aromatic and then adding two 28-ounce cans of crushed San Marzano tomatoes, an optional tablespoon or two of tomato paste, and two sprigs o' basil.
