What is a "gluten-free diet"?
A gluten-free diet is a dietary approach that eliminates gluten, a protein found in wheat, barley, rye, and related grains. This diet is primarily followed by individuals with celiac disease, an autoimmune disorder in which consuming gluten triggers an immune response that damages the small intestine. It is also followed by some people with gluten sensitivity or wheat allergy. Foods that are naturally gluten-free include fruits, vegetables, meat, fish, poultry, dairy products, legumes, nuts, seeds, and gluten-free grains such as rice, corn, and quinoa. While necessary for those with celiac disease or gluten sensitivity, there is no evidence to suggest that a gluten-free diet provides health benefits for individuals without these conditions.
