What is "sujebi"?

Sujebi is a popular Korean comfort food that consists of hand-torn pieces of dough simmered in a savory broth. The dough is typically made from flour, water, and sometimes potato or sweet potato starch, and is torn into irregular pieces to create a rustic and homemade appearance. The broth is often made with dried anchovies, kelp, and other ingredients such as vegetables or meat. Sujebi can be served plain or with a variety of toppings such as kimchi, scallions, and eggs. Sujebi is also a popular dish in Korean restaurants outside of Korea and is sometimes referred to as "hand-torn noodle soup".
