What is "bossam"?
Bossam is a traditional Korean dish that consists of boiled pork belly that is sliced into thin pieces and served with various condiments and wrapped in lettuce leaves. The pork belly is first boiled with various seasonings such as garlic, ginger, and scallions, to infuse it with flavor and make it tender. The pork is then thinly sliced and served with fresh lettuce leaves, pickled vegetables, and condiments such as ssamjang, a spicy paste made from soybean paste and red pepper paste, as well as raw garlic, sliced chili peppers, and salted shrimp. To eat, diners typically take a lettuce leaf, add a piece of the pork belly, some condiments and wrap it up like a burrito.
