What is "mafalde"?

Mafalde is a ribbon-shaped pasta with wavy edges, resembling miniature lasagna noodles. It has a delicate and smooth texture, allowing it to absorb sauces well. To make mafalde, a dough of durum wheat flour and water is rolled thin and cut into long, flat strips. The strips are then carefully folded and pinched along the edges to create a distinctive wavy shape.
