What is "vermouth"?

Vermouth is a type of fortified wine that is flavored with a blend of botanicals, including herbs, spices, and roots. The wine is typically fortified with a neutral spirit, such as brandy, and then infused with the botanicals, which can include ingredients like wormwood, coriander, and chamomile. Vermouth comes in two main types: sweet vermouth, which is red in color and has a sweet, fruity taste, and dry vermouth, which is white or pale yellow in color and has a crisp, dry taste. Vermouth is a versatile ingredient in cocktails and is commonly used in classics like the Martini and the Manhattan, as well as in newer creations like the Negroni.
