What is "retsina"?

Retsina is a Greek wine that is known for its distinctive flavor and aroma, which is derived from the addition of pine resin during the winemaking process. The resin is added to the must, or grape juice, early in the fermentation process and is left to macerate with the wine for several months, resulting in a wine that has a slightly pungent and resinous taste and aroma. Retsina is typically made from the Savatiano grape variety, which is grown in the region of Attica in Greece, but can also be made from other grape varieties.
