What is a "broiler"?
A broiler is a kitchen appliance or feature in an oven used for cooking food by exposing it to direct radiant heat from above. It typically consists of a heating element, either gas or electric, positioned near the top of the oven cavity, which produces intense heat to quickly brown, sear, or caramelize the surface of food. Broilers are commonly found in conventional ovens, where they provide an alternative cooking method to baking or roasting. To use the broiler, food is placed on a rack or tray positioned near the top of the oven, directly under the heating element, and cooked for a short period until it achieves the desired level of browning or char. Broiling is ideal for cooking thin cuts of meat, fish, vegetables, or for adding a finishing touch to dishes like gratins or melted cheese toppings.
