What is "busiate"?

Busiate is a traditional Sicilian pasta known for its unique twisted shape and artisanal preparation. Made from durum wheat flour and water, the dough is rolled and hand-rolled around a thin wooden rod to create a spiral shape. This technique gives busiate its distinctive texture, with a slightly rough surface that helps sauces cling to the pasta.
