What is "pulque"?

Pulque is a traditional Mexican alcoholic beverage that is made by fermenting the sap of the agave plant. It has a cloudy and slightly viscous texture, with a tangy and slightly sour flavor that is often compared to a cross between beer and yogurt. Pulque is a low-alcohol drink, typically containing between 4% and 6% alcohol by volume, and is often consumed in large quantities. It has a long history in Mexico, dating back to pre-Columbian times, and is still produced and consumed in traditional ways in many rural areas of the country. Pulque is often served fresh and unflavored, although it can also be flavored with fruits or spices, and is typically consumed in communal settings, such as pulquerias, which are traditional bars that specialize in the drink.
