What is a "winter melon"?
Winter melon, also known as wax gourd or ash gourd, is a type of fruit belonging to the species Benincasa hispida. It is characterized by its large size, elongated shape, typically pale green flesh, and a light green to white waxy rind which gives it a shiny appearance. Winter melons are commonly grown in tropical and subtropical regions and are harvested when matured. Despite its name, winter melon is typically harvested in the late summer or early autumn. The flesh of the fruit is mild and slightly sweet, with a firm texture that holds up well in cooking. Winter melons are often used in Asian cuisines, prized for their versatility in soups, stir-fries, and desserts.
