What is "enmolada"?
Enmoladas are Mexican dishes consisting of corn tortillas coated in mole sauce, stuffed with shredded chicken or turkey, and then rolled or folded to be served with cheese, onions, and sesame seeds. They are not always baked, but are more often served individually, stuffed, rolled, put on a plate and topped with the mole. The mole sauce can be any color, but the darkest mole, mole negro, is the most popular. Vegetables can also be used as a filling. Enmoladas can be heated like a regular tortilla, or briquettes can be used to cook them quickly.
